Herb Focaccia

Overview

This Focaccia is a simple yet stunning way to elevate your holiday menu. Customize it with your favorite toppings like herbs, onions, or capers for a personal touch. Feel free to add whatever you’d like! Serve it with Bread & Butter Prosecco for a perfectly balanced pairing that adds a bit of sparkle to your gathering. Easy to make and sure to impress!

Ingredients

  • 1 2/3 cup warm water
  • 1/4 tsp dry active yeast
  • 1 Tbs. Honey
  • 1 Tbs. Extra virgin olive oil
  • 3 cups bread flour
  • 1 tsp salt
  • Herbs, sliced red onion and capers for bread art

Instructions

  1. In a large mixing bowl add the water, yeast, honey and oil.
  2. Stir together and let it sit for about five minutes, letting the yeast do its thing.
  3. Add the bread flour and salt; stir with a wooden spoon to combine creating a shaggy dough.
  4. Cover this for ten minutes, then come back and stretch the dough over itself. Cover another ten minutes. Come back and do it again, a good stretch of the dough over itself. Cover for ten more minutes, then give it one final stretch. The dough should be very silky and smooth at this point. Drizzle with a little more oil and cover with plastic wrap and a kitchen towel. Let this sit on the counter overnight.
  5. Next day, uncover the bowl and look at those bubbles! Take a casserole or baking dish and drizzle with a good amount of olive oil. Transfer the dough into the dish and drizzle with a little more oil. Dimple with your fingers and cover for two more hours to rise.
  6. After two hours, preheat your oven 400. While the oven heats, we’ll make our design. Dimple the bread once more with your fingers and get to work! I used fresh rosemary as grass, parsley as trees, sliced snack peppers and red onion as flowers. Capers looks cute as little bees with thymes leaves around them. Really anything goes. Just have fun with it.
  7. Once you’ve completed your design, into the oven she goes for 25 minutes.
  8. Garnish with flaked sea salt, let it rest for a few minutes, then slice and serve with Bread and Butter Wines Prosecco! Just perfect.
