Ashton Keefe’s Sausage and Asparagus Quiche Recipe
Serves 6–8
“There are so many spring occasions ideal for serving quiche, but my favorite is Mother’s Day,” Ashton shares. “Make ahead or enjoy room temperature or cold. I love pairing this with Bread & Butter Chardonnay, a rich, lush California Chardonnay that pairs with any egg dish, but particularly one made for mom.”
Ingredients
- 1 pie crust
- 1 lb. spicy sausage, browned and cooked through
- 12 eggs
- 1 cup heavy cream
- 1 tablespoon salt
- 1 bunch blanched and chopped asparagus, reserving a few spears for garnish
- 8 ounces goat cheese
Instructions
- Preheat oven to 375°F. Press pie crust into a high-sided pie dish or cake pan and fold edges slightly for a rustic look.
- Layer cooked sausage and asparagus evenly over the crust.
- In a large bowl, whisk together eggs, heavy cream, and salt until smooth and lightened in texture. Pour mixture into the dish. Dot with goat cheese.
- Bake for 25–30 minutes or until the eggs begin to set. Add reserved asparagus spears on top for garnish.
- Continue baking another 25–30 minutes until the quiche is fully set and lightly golden brown. Allow to cool slightly before serving.
