Overview
Elote, also known as Mexican street corn, is a savory, tangy, spicy snack typically topped with mayo or crema, lime, chile, and Mexican cheese like Cotija. We’re taking a Bread & Butter twist to the traditional Elote with a custom butter (because you know how we feel about butter 😉) highlighting the flavors of this delicious street corn. This recipe comes together in minutes and is a perfect accompaniment to enhance your summer meals, preferably enjoyed al fresco. Open a bottle of our California Chardonnay, grill up some corn, and get to snacking.
Ingredients
- 4 oz unsalted butter, room temperature
- 2 tbsps fresh lime juice
- 2 tsps lime zest
- 1 tsp chili powder
- 1 tsp dried oregano
Instructions
- Place butter, lime zest, lime juice, chili powder, and oregano in a food processor and blend until smooth.
- Spread over freshly grilled corn.
- Enjoy with a glass of Bread & Butter Everyday Chardonnay.
